Jahňacina na veľkonočnom stole

Netradičné menu dokáže obohatiť veľkonočné posedenie v kruhu rodiny. Vyskúšajte pre tenotkrát jaňacie mäso. V nasledujúcom texte vám poradíme ako najlepšie pripravíte tento druh mäsa, ktorého  stráviteľnosť je lepšia ako je to u bravčového mäsa.

Jahňacie mäso má typickú arómu a chuť. Platí pravidlo, čím mladšie jahňa, tým je jeho chuť lahodnejšia. Jemnosť mäsa závisí od odrody, chovu, ale aj od pohlavia jahniatok. Najkvalitnejšie je mäso z jarných jahniatok starých 5 až 8 mesiacov. Charakteristickú arómu mäsu dodáva tuk a blany, ktoré je dobre odstrániť. Pri jeho úprave je vhodné použiť bylinky, korenie a rôzne marinády. Aby ste sa zbavili nežiadúcej chuti, môžete mäso prešpikovať zeleninou a slaninkou deň pred úpravou,  naložiť ho vo víne s bylinkami na niekoľko hodín až dní.

Jahňacie na rozmaríne a pečené zemiaky

P O T R E B U J E T E: 1/2 väčšieho biocitrónu, 3 strúčiky cesnaku, 5 vetvičiek rozmarínu, 300 ml suchého bieleho vína, 5 lyžíc olivového oleja, 600–800 g jahňacej plece bez kosti, soľ a čerstvo mleté korenie, 2 menšie cibule, 2 paradajky

P O S T U P:
1, Z citrónu vytlačte šťavu do sklenenej alebo keramickej misy a potom z neho odkrojte asi polovicu kôry, ale len žltú časť. Kôru nakrájajte na veľmi tenké rezance. Cesnak olúpte a nakrájajte na tenké plátky. Lístky z dvoch tretín rozmarínu nasekajte. To všetko premiešajte
v miske s citrónovou šťavou, vínom a 3 lyžicami olivového oleja a do tejto marinády vložte mäso. Prelejte ho marinádou aj zhora (čo ešte v priebehu marinovania niekoľkokrát zopakujte, alebo mäso po čase otočte), misu prikryte fóliou na potraviny Fino a dajte na 24 hodín do chladničky.
2, Na ďalší deň mäso vytiahnite, nechajte z neho odkvapkať marinádu, osoľte ho a okoreňte. Položte ho do pekáčika a potrite zvyškom olivového oleja. Prikryte pokrievkou alebo alobalom, dajte do dolnej časti studenej rúry, rúru zapnite a nechajte dôjsť až k teplote 200 °C. Potom pečte 20 minút.
3, Potom pridajte cibuľu nakrájanú na štvrtiny, rozpolené paradajky a polovicu marinády a opäť zakryte. Znížte teplotu na 160 °C a pečte ďalšiu hodinu a pol za občasného polievania marinádou a prelievania vypečenou šťavou. Nakoniec dopečte dozlata už odkryté.

Pečené zemiaky

P O T R E B U J E T E: 800 g zemiakov, 2 lyžice olivového oleja, 1 lyžička mletej sladkej papriky, 1 lyžička drvenej rasce, soľ, 8 strúčikov cesnaku v šupke

P O S T U P:
1, Zemiaky olúpte, nakrájajte na väčšie kocky alebo mesiačiky, dajte do misky, prilejte k nim olivový olej, prisypte korenie a soľ. Potom pridajte celé strúčiky cesnaku, zbavené len hornej šupky a korienkov. Takto pečený cesnak krásne zosladne a nespáli sa. Všetko premiešajte, aby sa zemiaky obalili zmesou a korením.
2, Do pekáčika dajte na dno papier na pečenie Fino. Naň nasypte zemiaky s cesnakom a pečte ich v rúre asi na hodinu pri 160 °C. Prvých tridsať minút ich majte zakryté alobalom alebo pokrievkou, na druhú polovicu ich potom odkryte. Vo výsledku by mali byť pekne zlatisté.

P O T R E B U J E T E: 4 steaky z jahňacieho stehna, 2 lyžice lístkov čerstvého oregana a trochu na ozdobu, šťava z jedného citróna, 5 lyžíc olivového oleje, 100 ml bieleho vína, soľ a čerstvo mleté korenie, 4 veľké zemiaky o váhe, celkom asi 800 g, 4 strúčiky cesnaku, 2 cibule, 100 g syru pecorino alebo feta, 4 bobkové listy P O S T U P:

1, Plátky mäsa dajte do plochej misky. Oregano, citrónovú šťavu, 2 lyžice oleja a víno zmiešajte v hrnčeku, osoľte a okoreňte. Touto zmesou prelejte plátky mäsa v miske, obaľte ich v marináde z oboch strán a misku zakryte fóliou. Nechajte marinovať ideálne cez noc alebo aspoň pár hodín.
2, Na druhý deň si pripravte štyri listy papiera na pečenie Fino. Zemiaky olúpte, nakrájajte na silnejšie plátky a premiešajte ich s trochou oleja, soli a oregana. Na stred každého listu papieru rozdeľte zemiaky, na ne dajte plátok mäsa, posypte ho plátkami cesnaku, kolieskami cibule, kockami syra, na každý položte bobkový list a zalejte troškou marinády tak, aby nevytekala von z papiera.
3, Zdvihnite cípy každého papiera, stiahnite ich k sebe, zviažte ich navrchu ako mešec a tie vyrovnajte do pekáča. Pečte 2 hodiny v rúre rozpálenej na 160 °C. Balíčky preložte na taniere, opatrne uvoľnite povrázok a ihneď podávajte, aby si každý otvoril svoj balíček sám.
