Slané koláče

Čerstvá zelenina  chrumkavé cesto poteší každého gurmána v jesenných dňoch. Takéto jedlo je ľahké a zároveň sýte.


Slaný koláč s rukolou (4 porcie)

P o t r e b u j e t e: 150 g rukoly, 1 ½ pohára hladkej múky, 1-2 PL vody, 1 PL oleja, 125 g masla, 1 na tenké plátky nakrájaný pór, 2 pretlačené strúčky cesnaku, 2 vajcia, ½ pohára mlieka, ½ pohára smotany na šľahanie, pár lístkov čerstvej bazalky a hoblinky parmezánu

P o s t u p:
Rukolu dobre opláchnite, usušíte a nakrájate na malé kúsky.
Múku preosejete a pridáte nakrájané maslo a spracujete. Prilejete vodu a vypracujete mäkké  a hladké cesto, vytvarujete bochníček, ktorý zabalíte do fólie a ponecháte v chladničke 30 minút.
Pripravíte si loláčovú formu so zvlneným okrajom o priemere 2ť cm. Medzi dvoma mikroténovými fóliami vyvaľkáte cesto a vložíte do formy, aby pokrylo dno aj okraje formy. Na cesto vložíte papier na pečenie, vysypete fazuľami a necháte upicť v rúre asi 10 minút pri 200 °C. Potom pekáč vyberiete odstránite papier so strukovinami, znížite teplotu na 180°C a dopečiete do zlata asi 10 minút.
Na panvicu vylejete olej, pridáte nakrájaný pór a cesnak, opekáte do zmäknutia. Pridáte rukolu a ešte minútku podusíte. Odstavíte zo sporáka a necháte vychladnúť. Vyhchladnutú zmes nanesiete na korpus, zmiešate vajcia spolu s mliekom a smotanou, všetko zľahka rozľaháte. Nakoniec nalejte na zeleninu a koláč dáte do rúry, pečiete asi 40 minút, kým stuhne asfarbí sa do zlata. Pri podávaní ozdobíte bazalkou a parmezánom.
 

Tekvicové koláčiky s karí korením (8 porcií)

P o t r e b u j e t e:
Náplň: 1 PL oleja, 2 nadrobno nakrájané šalotky, 3 pretlačené strúčky cesnaku, 1 ČL kari korenia, 3 vajcia, ½ pohára smotany na šľahanie, 1 pohár pretlačenie pečenej tekvice, 1 ČL rímskej rasce
Tvarohové cesto: 1 ½ pohára hladkej múky, 125 g tučného tvarohu, 125 g masla

P o s t u p:
Do veľkej misy preosejete múku, pridáte tvaroh a nakrájané maslo a spracujete cesto.
Cesto potom vyklopíte na pomúčenú dosku a ešte spracujete, potom vytvoríte jeden bochníček, zabalíte do fólie a necháte v chladničke 30 minút.
Rúru zohrejete na 210°C. Cesto rozdelíte na osem rovnakých dielov, rozvaľkáte a vyložíte nimi 8 tukom potretých hlbokých formičiek o priemere 10 cm. Koláčiky pečiete as 15 minút do zlata. Formičky vyberiete a teplotu v rúre znížite na 180­°C.
V menšom hrnci rozohrejte  olej, pridáte cibuľu a cesnak a za stáleho miešania opekáte asi 5 minút. Prisypete kari korenie a ešte opekáte jednu minútu. Zmes rovnomerne rozdelíte do malých formičiek.
Dobre zmiešajte vajce, smotanu a tekvicu. Potom zmes naložíte na cibuľu v košíčkoch a posypete rímskou rascou. Formičky zapekáte asi 20 minút pri 180°C.


Zapekaný baklažán s cukinou (porcií)

P o t r e b u j e t e: 1 veľký baklažán, 1 PL soli, 200 g syra ricotta (jemný tvaroh), 1 ¼ phára zakysanej smotany, 3 vajcia, 1 PL kukuričnej múky, 1 pohár nastrúhanej cuiny, ½ rozdrveného korenia

P o s t u p:
Rúru predhrejete na 210 °C, pripravíte si šesť ohňovzdorných misiek a vymažete olejom.
Baklažán nakrájate na kocky, osolíte a necháte 20 minút potiť. Potom kocky opláchnete studenou vodou a vysušíte papierovým obrúskom.
Šľahačom vyšľaháte zo syra a smotany ľahký krém, pridáte vajce a kukuričnú múku a vyšľaháte do hladka. Potom zľahka do zmesi vmiešate nakrájaný baklažán a nastrúhanú cukinu s korením.
Hmotu rovnomerne rozdelíte do vymazaných misiek, ktoré urovnáte do veľkého pekáča s vodou, aby misky boli z 2/3 ponorené.  Nakoniec pekáč voľne prikryjete alobalom.
Pečiete asi 40 minút, skontrolujete či špáradlo po vytiahnutí je čisté. Podávate s rajčinovo cibuľovým šalátom v sladkokyslom náleve.
